Production Manager – Bakery Operations

About the role

The Production Manager will lead daily bakery operations, ensuring that production schedules, quality standards, and safety regulations are consistently met. This role combines hands‑on equipment expertise with strategic oversight of inventory and cost control.

Key responsibilities

• Plan and coordinate daily baking schedules, mix sheets, and prep workflows to satisfy wholesale and retail demand.
• Monitor recipes, baking parameters, and finished goods for taste, weight, texture, and appearance.
• Manage raw ingredient stock, ordering, supplier coordination, and track production costs to minimise waste.
• Enforce HACCP and local food‑safety regulations across the floor and equipment.
• Hire, train, schedule, mentor and evaluate bakers, prep cooks and line supervisors.
• Operate, troubleshoot and maintain mixers, proofers, ovens and related machinery.

Required profile

• Minimum 10 years of food or bakery production management experience with hands‑on baking knowledge.
• Strong organisational leadership, problem‑solving ability and basic financial acumen.
• Proficiency in production‑management software (e.g., SAP) and general computer literacy.
• Excellent communication skills for coordination with floor staff, maintenance, sales, marketing and distribution teams.
