Commercial Bakery Manager

About the role

Food Pro PNG Ltd is looking for a Commercial Bakery Manager to run its 24‑hour bakery operation at the 8 Mile Production facility in Port Moresby. The role is hands‑on, overseeing production, training staff and ensuring product quality.

Key responsibilities

• Plan and run production across all bakery lines in a 24‑hour operation.
• Lead, roster and train a team of up to 30 bakers and production staff.
• Operate and oversee packaging equipment, ensuring pack/label accuracy.
• Track waste and yield, acting on variances.
• Maintain food safety, hygiene and quality standards in partnership with the QA team.

Required profile

• Qualified, experienced baker with strong skills across bread, cakes, pastry and pies.
• Proven experience managing a commercial or industrial bakery team.
• Comfortable working night shifts and rotating schedules.
• Experience in PNG or as an expatriate is highly regarded.

Required skills

• Hands‑on experience with packaging equipment.
• Ability to train staff at all skill levels.
